Originally called the “Savarin mould,” the tool was first used in Paris in the 1800s and was a large size made for “gateau” or cake.

In recent years, smaller sizes of ring molds have been used for both sweet and savory concoctions to prepare appetizers, salads, entrées and desserts.

Sometimes the prep work is referred to as vertical stacking, and the finished result is listed on the menu as a stack, as in “crab stack.”

Because molded dishes can incorporate from 3 to 10 complementary ingredients, they appeal to diners who like lots of flavors together as well as those who prefer just a few.

The final product takes only a few bites to polish off, so it’s important that every bite evokes the pleasure of the combined flavors and textures.

Sometimes ingredients are used as a base (as in a rice, pasta or risotto) for other foods stacked on top. Other recipes call for edible elements to be used as a container themselves (as in a cucumber sliced thinly lengthwise).

The charm lies in how easy it is to use the mold as a guide to create that container. Sliding the mold off presents a perfectly shaped bundle, making the assembly look more difficult than it is.
